These sheet pan kebabs are an easy lunch or dinner option. There are many ways they can be served, this recipe has instructions for kebabs on pita or flatbread. They can also be served over rice or on a salad. The three recipes included are for the kebabs to be served on a pita with cucumber salad, roasted tomatoes and garlic tzatziki.
Serves 4-6
Time: 25 mins prep
1 hour cooking but can be made ahead of time
Components:
Kebab skewers
Ingredients:
- 1 medium red onion minced or small dice
- 2 lbs ground beef (Likely 2; 1oz packages)
- 1tsp garlic powder
- 2 ½ tsp kosher salt
- 1 ½ tsp ground cumin
- 1 tsp ground coriander
- 1tsp paprika
- ½ tsp black pepper
- 5 tbsp seltzer (plain, lemon or lime)
- 1 egg
- Pita bread, flatbreads, or rice to serve
Steps:
- Dice the onion
- Combine all ingredients except seltzer in a bowl and mix until incorporated
- Fold in the seltzer and mix until just combined, don’t overmix
- Place bowl in fridge for at minimum 10 minutes
- Preheat oven to 425°F
- Cut two pieces of parchment paper to the size of a baking sheet and lightly oil each one
- Place half of the kebab mixture onto the center of the parchment paper and cover with the other one with the oiled side down
- Using hands or a rolling pin, press and spread out kebab mixture to ¼ an inch thick
- Transfer to the baking sheet and score with a butter knife. (about 1 inch thick strips)
- Place back in the fridge and repeat steps 5-8 with the remaining kebab mixture
- Place baking sheets in the oven and bake for 7-8 mins.(You might need to remove from the oven and drain some of the liquid)
- Once the pink coloring is mostly gone, switch to broil for 1-2 mins to finish cooking and crisp slightly
- Remove from oven and serve
Cucumber Salad
- 2 large english cucumbers chopped, diced, or minced to preference
- ½ white onion finely minced (or bigger for a stronger onion flavor)
- 1 bunch parsley chopped
- Salt, olive oil and lemon juice to taste
- Cut cucumbers to desired size, mince onion and chop parsley
- Season with salt, olive oil, and lemon juice to taste
Roasted Veggies and Tatziki
1 clove of garlic
8-12 medium tomatoes cut in half
1 chopped yellow onion
8oz tzatziki (store bought or homemade)
- Preheat oven to 425° F
- Cut the top off the clove of garlic, exposing all of the cloves but leaving it held together
- Cut tomatoes in half and chop onion
- Place all ingredients in a baking dish, with the tomatoes and garlic cut side up
- Drizzle olive oil on garlic only and place in oven
- About ½ hour into cooking, add more oil to garlic, slightly break up tomatoes with a spoon, and toss the onions with a little olive oil.
- Return to the oven
- After about an hour total, around another half hour after adding more oil, when garlic is soft, onions are translucent and slightly caramelized, and tomatoes appear blistered, remove from the oven
- Season onions and tomatoes with salt to taste
- Allow garlic to cool for a few minutes and then squeeze the cloves into the tzatziki and mix
To serve on pitas or flatbreads:
Spread a layer of tzatziki on the bottom, then place kebab meat strips, add a few tomatoes and onions, add the cucumber salad,more tzatziki and top with fresh parsley (optional)
